Ingredients
- 1 cup all-purpose flour
- ¼ cup granulated sugar
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 1 large egg
- ½ cup plain yogurt
- ¼ cup milk
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- ¾ cup fresh or frozen blueberries
- 1 teaspoon lemon zest (optional)
- 1 teaspoon flour, for coating the blueberries
Instructions
Step 1: Prepare the Oven
Preheat the oven to 350°F (175°C). Lightly grease a mini muffin pan with butter or nonstick cooking spray, or line it with mini paper muffin liners.
Step 2: Mix the Dry Ingredients
In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Mixing these ingredients evenly helps the bites rise and develop a light, fluffy texture.
Step 3: Combine the Wet Ingredients
In a separate bowl, whisk the egg, yogurt, milk, melted butter, and vanilla extract until smooth. If you enjoy a fresh citrus flavor, add the lemon zest.
Make sure the melted butter has cooled slightly before mixing it with the egg.
Step 4: Make the Batter
Pour the wet ingredients into the dry ingredients. Gently stir with a spatula until just combined. Do not overmix, as this can make the blueberry bites dense instead of fluffy.
In a small bowl, toss the blueberries with one teaspoon of flour. Carefully fold them into the batter, distributing them evenly without crushing them.
Step 5: Fill the Muffin Pan
Spoon the batter into the prepared mini muffin cups, filling each approximately three-quarters full. This gives the bites enough room to rise while keeping their rounded shape.
If desired, place one or two extra blueberries on top of each bite for a pretty finish.
Step 6: Bake Until Golden
Bake for 12–15 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
If using a standard muffin pan instead of a mini muffin pan, increase the baking time to approximately 18–22 minutes, checking for doneness.
Step 7: Cool and Serve
Remove the pan from the oven and let the blueberry bites cool for 5 minutes. Carefully transfer them to a wire rack to cool slightly.
Serve warm or at room temperature. For extra sweetness, dust lightly with powdered sugar or drizzle with a simple lemon glaze.
Tips for Perfect Fluffy Blueberry Bites
- Use room-temperature ingredients: The egg, milk, and yogurt combine more evenly when they are not cold.
- Avoid overmixing: Stir only until the flour disappears to keep the texture tender.
- Choose fresh or frozen blueberries: Both work well. If using frozen blueberries, add them straight from the freezer without thawing.
- Measure the flour correctly: Too much flour can make the bites dry and heavy.
- Check early: Mini muffin pans vary, so begin checking for doneness after 10–12 minutes.
Optional Variations
- Lemon blueberry bites: Add extra lemon zest and a little lemon juice for a bright, refreshing flavor.
- Cinnamon blueberry bites: Add ¼ teaspoon ground cinnamon to the dry ingredients.
- Blueberry chocolate bites: Fold in 2 tablespoons of white chocolate chips.
- Whole-wheat version: Replace half the all-purpose flour with whole-wheat flour for a heartier texture.
- Glazed blueberry bites: Mix ½ cup powdered sugar with 1–2 teaspoons lemon juice and drizzle over the cooled bites.
Storage Instructions
Store the blueberry bites in an airtight container at room temperature for up to 2 days, or refrigerate for up to 5 days. Reheat briefly in the microwave for a soft, freshly baked texture.
You can also freeze them in a freezer-safe container for up to 2 months. Thaw at room temperature or warm gently before serving.
Enjoy your fluffy blueberry bites as a quick breakfast, lunchbox snack, afternoon treat, or sweet addition to a weekend brunch.
